After the harvest of fruits and vegetables, the process of breathing / respiration continues.
Respiration is the conversion of fruit sugars into CO2 and water using oxygen, releasing energy that is necessary for the processes in the fruit. The respiration proceeds according to the formula below;
C6H12O6 + 6O2 -> | 6CO2 + 6H2O + energy + aromatics/ethylene |
Sugars + Oxygen -> | CO2 + Water + energie + aromatics/ethylene |
The conditions under which the fruits are stored have a major influence on the course of respiration. The most important factor is temperature. When the temperature is lowered, breathing slows down.
